Lady Edison was born out of Sam Suchoff’s love of pork. Building on the success of The Pig, his whole-hog barbecue restaurant, Sam launched Lady Edison, home of a growing line of pasture-based cured pork products.

Lady Edison Extra Fancy Country Ham was the first in Lady Edison’s product line. This rich, flavorful ham is aged at least 18 months to deepen the flavor and texture of the pork. “The ham has a distinct but mild ‘ham funk’ and is buttery and rich, and not too salty,” says Suchoff. “It is a pure expression of pork and time.” Lady Edison Extra Fancy Country Ham received national recognition as a Good Food Award nominee and winner along with several other products in the Lady Edison line which has expanded to include Lady Edison coppa, chorizo, jowl bacon, lomo, pork loin pastrami and more. Sam often collaborates with other businesses to make delicious products like Lady Edison/San Giuseppe Salami Co. Hot Sopressata, and Lady Edison/The Smoking Goose Nduja.

Sam is committed to sourcing pork from independent farmers in North Carolina using sustainable management practices, so he began sourcing Certified Animal Welfare Approved by AGW, Certified Non-GMO by AGW pork from the North Carolina Natural Hog Growers Association (NCNHGA). “They are an established farmer owned cooperative that markets pasture-based pork on behalf of it’s member farms, so working with them just made sense,” says Sam. “It’s the quality of the NCNGHA pork that really shines through. People really can taste the difference.”
